About Blue Carbon Steel:
This pan is made of blue carbon steel which is made using a hardening process that prevents rust and develops into a naturally nonstick surface, much like cast iron. For this reason, it also needs regular seasoning before the first use and after each subsequent use. As it seasons, the original blue color will gradually darken and turn black. Unlike cast iron, blue steel is lightweight for more convenient maneuvering and quicker to season into a smooth, nonstick finish. Though not dishwasher-safe, this nonstick pan is easy to clean and should be dried carefully to prevent reoxidation. **Due to the nature of the natural material of this pan, your product may arrive slightly discolored and will continue to discolor over time. This is normal and will occur.
PRIOR TO THE FIRST USAGE: Seasoning Your Pan
Prior to the first usage or after an intensive cleaning, a steel pan must be seasoned/re-seasoned. New pans often show markings, discolorations, and/or visual scratches. These will disappear upon seasoning and do not affect the properties of the pan. Using a paper towel, simply wipe the interior of the pan with any type of flavorless cooking oil and heat the pan while empty. When the pan becomes hot (i.e. when the oil begins to liquefy), turn the heat off. Wait for the pan to cool and with a piece of paper towel wipe off excess oil. Repeat this process once or twice. Notice the color has changed to a darker finish. The pan is not dirty, but rather the heat has changed its original color. In the process, the steel pan has gained natural non-stick protection.
